Rice and Salami Salad with Alioli Sauce (Ensalada de Arroz y Salami con Alioli)
1 1/2 cups cooked rice 1 cup Alioli Sauce (recipe follows) 1 cup chopped Salami 1 green bell pepper chopped 1/2 purple onion chopped 2 scallions chopped 1/2 cup golden raisins (sultanas) 1 can corn, drained 2 tb chopped cilantro or parsley salt & ground pepper to taste
Transfer the rice to a mixing bowl. Add 1/2 of the Alioli Sauce. Add remaining ingredients & toss thoroughly. Refrigerate until serving time.
Alioli Sauce (in food processor)
4 garlic cloves peeled 1 egg + 1 egg yolk 1 tb Dijomn Mustard 1 tb fresh lemon juice 1/4 tsp salt 1/8 tsp ground pepper 3/4 cup olive oil.
Add all the ingredients except the oil to the container of the processor (metal blade). Cover the processor. Begin Processing adding the oil in a very thin stream through the feed tube util you add all the oil. If the Sauce is too dense, add a little bit of milk to it. You can add same chopped Cilantro or Pimiento to this Alioli Sauce, for color & a different flavor.
