Chopped Tomato Salad Servings: 8
6 medium tomatoes 2 medium onions 2 medium green bell peppers 6 medium celery stalks
2/3 cup red wine vinegar 3 tb honey 1/2 tsp ground cloves 2/3 cup olive oil Dash of Tabasco Salt & pepper to taste Minced fresh parsley or CilantroCut the first 4 ingredients into 1/2 inch pieces (Chopped). Combine in large bowl. Mix vinegar, honey & cloves in small bowl. Slowly whisk in oil in thin stream. Season with Tabasco & salt & pepper. Mix into salad. Refrigerate at least 4 hours, turning occassionally. Let stand at room temperature 20 minutes before serving. Drain the salad & sprinkle with chopped parsley or cilantro.
