GRILLED CHEESE QUESADILLAS WITH FRESH SALSA
1 8-ounce package cheese for nachos and tacos, divided 8 7-flour tortillas
Salsa: 2 large tomatoes, seeded and chopped (about 3 cups) 1 cup chopped sweet onion 1/4 cup chopped fresh cilantro 1-2 small jalapeno peppers, seeds and chopped finely 2-3 tablespoons fresh lime juice, 1 large clove garlic, crushed 1/2 teaspoon salt 1/8 teaspoon pepper
In medium bowl, combine all salsa ingredients and mix well. Cover and refrigerate until serving time. Divide 1 1/2 cups cheese and sprinkle evenly over half of each tortilla. Fold tortilla in half, pressing lightly. Place quesadillas on grid over medium ash-covered coals. Grill 2-4 minutes, or until tortilla is crisp and cheese is melted, turning only once. Sprinkle remaining cheese over hot quesadillas. Serve with salsa.
