Spitzbuben (Urchins) Source: The Art of German Cooking Makes about 20 cookies
2 cups flour 12 tablespoons butter, softened 1 cup sugar 1/2 cup almonds, coarsely chopped jam powdered sugar
Beat together flour, butter, sugar and almonds to a smooth dough. Chill.
Roll out 1/8-inch thickness on floured board. Cut into 2-inch circles with a biscuit cutter. Cut out centers out of half the circles.
Bake on ungreased baking sheet at 350 degrees F for 12 to 15 minutes.
Remove from baking sheet. Put jam on bottom cookies and place rings on top. Dust with powdered sugar.
