Double Peanut Spritz (cookie press)

Makes 48 cookies

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/4 tsp baking soda
1/2 cup peanut butter
1/4 cup margarine or butter
1/2 cup sugar
1/2 cup brown sugar, packed
1 egg
2 squares (2 ounces) semisweet chocolate
2 tsp shortening
1/2 cup roasted peanuts

Stir together all-purpose flour, whole wheat flour, and baking soda in a small mixing bowl. Set aside.

Beat peanut butter and margarine or butter in a large mixer bowl with an electric mixer on medium speed for 30 seconds. Add sugar and brown sugar and beat till fluffy. Add egg and beat well. Gradually add the flour mixture, beating till combined. Do not chill dough.

Pack dough into a cookie press. Force the dough through the cookie press onto an ungreased cookie sheet.

Bake in a 400F oven for 5 to 7 minutes or till edges are firm but not brown. Remove and cool completely on racks.

Melt the chocolate and shortening in a small heavy saucepan over low heat, stirring often. Dip half of each cookie into melted chocolate, then into peanuts. Let stand on wire rack till chocolate sets.
