Orange Glazed Vanilla Wafers rec.food.cooking/Nancy Dooley (1995) Makes 7 to 8 dozen cookies
1/2 cup butter 1/2 cup shortening 2/3 cup granulated sugar 2 tsp. vanilla 1 tsp. salt 2 eggs 2 3/4 cups sifted all-purpose flour
Cream butter, shortening, and sugar. Add vanilla and salt. Add eggs, one at a time, beating well after each. Stir in flour, mixing well.
Drop from a teaspoon 2 inches apart on greased cookie sheet. Flatten with floured, flat-bottom glass.
Bake in moderate oven (375F) for 8 to 10 minutes or until delicately browned on edges. Remove immediately from pan.
While cookies are still hot, brush with a mixture of 1/2 cup sifted powdered sugar, 1 Tbsp. orange juice, and 1/4 tsp. grated orange peel. Dot with bits of candied ginger.
