Apple Upside Down Cake rec.food.cooking/Curly Sue (2001) Source: Ceresota Flour
I cut this recipe off the Ceresota brand flour bag almost two years ago and have had it displayed prominently in the kitchen ever since. Today I *finally* got around to making it and it's a keeper. Yum yum yum...
TOPPING 3 or 4 medium-size apples 1/4 cup melted butter 1/2 cup brown sugar
Preheat oven to 350 deg F. Grease a 13x9x2-inch baking pan; line bottom with waxed paper and then grease paper.
Pare and core apples; then cut into 1/4-inch thick wedges (about 2 cups).
Pour melted butter in pan and sprinkle with brown sugar. Arrange apples, edge to edge, over sugar.
CAKE 2 cups sifted Ceresota unbleached flour 3 tsp baking powder 1 tsp salt 1/2 cup shortening, softened 1 cup sugar 2 eggs 1 tsp vanilla 1 cup milk
Sift together flour, baking powder, and salt. Cream shortening with sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in dry ingredients alternately with milk; add vanilla and blend well. Pour batter over apples. Bake 40-45 min. Turn cake upside down on a large cake plate or platter immediately. Serve warm with whipped cream.
My notes: --I had two 13x9-inch pans and next time I'll use the smaller one so that the cake part will be thicker --I used Pam baking spray for greasing the pan and waxed paper --It was good even without whipped cream :> --The cake batter was more "spreadable" than "pourable." --A nice variation would be to sprinkle a tiny bit of cinnamon or apple pie spice on the apple part, maybe mix it with the brown sugar.
