PUMPKIN BEEF STIR FRY

1/4 cup olive oil
1 garlic clove well minced
1/2 lb beef well (thinly) sliced
3 slices fresh ginger
1/2 cup chopped onions
1/2 cup chopped celery
2 cups fresh green beans parboiled or frozen
1/4 cup dry sherry
1/4 cup soy sauce
2 cubes instant chicken broth
1 1/2 cups water
2 cups sliced & chopped raw pumpkin
2 tb cornstarch
rice or noodles

Heat the oil in a WOK & add the garlic & beef. Stir fry. Remove from WOK & put aside. Add ginger, onions, celery & green beans & stir fry. Return the beef to the WOK & add sherry, soy sauce, chicken broth (previously crushed), water & pumpkin. Mix & cover. Steam until vegetables are al dente. Mix the cornstarch with water until forming a paste. Add to the WOK and stir cook until the sauce had thickend. Serve over rice or Noodles.
