Zucchini Oatmeal Bread rec.food.baking/sgig6566 (Julie) (1996)
2 cups flour 1 cup quick cooking oats, uncooked 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/2 cup sugar 1/2 cup firmly packed brown sugar 3/4 tsp ground cinnamon 3 large eggs 3/4 cup vegetable oil 1 tsp vanilla 3 cups shredded zucchini Combine first 8 ingredients in large mixing bowl; make a well in center of mixture. Set aside. Combine eggs, oil, and vanilla in bowl; beat with wire whisk till blended. Stir in zucchini; add to dry ingredients, stir till just moistened. Spoon batter into greased 9x5x3-inch loaf pan. Bake at 350 degrees for 1 hour and 15 minutes or till wooden pick inserted in center comes out clean. Cool in pan 10 minutes then remove and let cool completely.
