Sweet Potato Recipes Part 3 (7)

Kurikinton (Chestnut and Sweet Potato Cake) and
Tazukuri (Small Sardines Cooked in Soy Sauce)

Ingredients: (4 servings)
Kurikinton
300g sweet potatoes, well-peeled, cut and soaked in water for a while
150g chestnuts (commercially boiled sweet chestnuts, packed in syrup)
100g syrup
5 kuchinashi (Cape jasmine) seeds, crushed roughly with a wooden pestle

Tazukuri
40g gomame (small dried sardines)
90cc sake
1 Tbsp. sugar
10cc mirin
30cc soy sauce
Ichimi-togarashi (red pepper powder)

Recipe:
1. To make Kurikinton, put 1000cc water, sweet potatoes and kuchinashi seeds in a saucepan
and bring to a boil. Cook until the sweet potatoes are tender enough to be smoothly pierced through with a bamboo skewer. Soak in chilled water and drain.
2.Clean the saucepan and place on heat. Add the sweet potatoes, chestnuts and syrup. Break up and knead the mixture over medium heat until it does not stick to the hand. Spread out on a large plate to cool.
3. Soak a kitchen cloth in water and squeeze out as much water as possible. Put some of the kneaded sweet potato mixture at the center of the cloth, cover with cloth and shape into a ball, slightly wringing the top.
4. To make Tazukuri, put the small dried sardines in a frying pan and parch slowly over low heat for approx. 15 minutes or until the fish is completely dry and crispy.
5. Put the sake, sugar, mirin and soy sauce in a small saucepan and boil down, occasionally swinging the pan, until the bubbles of liquid become small. Add the parched sardines and quickly coat with the liquid. Remove from heat. Spread out over a large plate, taking care not to stick to each other. Sprinkle with the ichimi-togarashi and set aside to cool.
6. Arrange Kurikinton and Tazukuri decoratively on a serving dish.
Professional Notes:
To cook Kurikinton, use the syrup in which the chestnuts are soaked. The dish is sweet enough with the syrup, coupled with the natural sweet of the sweet potatoes. Take your time parching the small sardines over low heat, occasionally swinging the frying pan until very crispy.eggy-in-aus (09:02:58) :

Sweet Potato Cake Roll

Ingredients
3 eggs
1 cup sugar
2/3 cup cooked, mashed sweet potatoes or yams
1 Tablespoon lemon juice
3/4 cup all purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
3/4 cup chopped pecans

confectioners sugar
8 ounces cream cheese
4 Tablespoons margarine
1 cup confectioners' sugar
2 teaspoons concentrated orange juice
1/2 teaspoon grated orange peel or dried orange zest

Preheat oven to 375 degrees. Line a 10 x 15-inch jelly roll pan with wax paper. Grease and flour paper. In the large bowl of an electric mixer, beat eggs at high speed for 5 minutes. Then add sugar gradually. Stir in cooked sweet potatoes or yams and lemon juice. In a separate bowl, stir flour, baking powder, spices and salt together. Gently fold into sweet potato or yam mixture.

Pour into prepared pan and sprinkle with nuts. Bake for 15 minutes. Turn out onto dish towel sprinkled with confectioner's sugar. Roll together with towel and wax paper. Cool on wire rack.
While cake cools, prepare Orange Filling

Bring cream cheese and margarine to room temperature. Place them in the large bowl of an
electric mixer and whip until fluffy. Add sugar and orange juice concentrate. Beat until smooth.

Unroll cake, carefully peel off paper and spread cake with filling. Roll cake up and wrap in new wax paper. Chill 2 to 4 hours

Serves: 12SWEET POTATO AND BANANA BAKE

2 lbs sweet potato, cooked
1 cup fresh orange juice
1 tsp salt
1/2 tsp nutmeg
1/2 pepper
1/2 cup sugar
6 bananas
2 tbsp fresh lemon juice
1/3 cup butter

Mash s/potato, add orange juice, salt and pepper, nutmeg and sugar. Cut bananas into quarters, sprinkle with lemon juice. Put 1/2 s/potato mixture in a greased oven dish, cover with 1/2 the bananas and dot with 1/2 the butter. Repeat above and
bake in a pre-heated oven for 30 minutes(170c 325f) This kids love, my lot almost treat it as a dessert!!!!!!!!

SWEET POTATO BREAD

2 eggs
1/2 c. molasses
1/4 c. sugar
1 c. sweet potatoes (yams), cooked and mashed
2 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/4 tsp. cloves
1 c. raisins
1/2 c. walnuts, chopped
1/4 c. butter

Preheat oven at 350 degrees. Whip sugar, eggs and shortening until light and fluffy. Add molasses and sweet potatoes. Sift all dry ingredients together. Slowly add to sweet potato mixture and stir. Add raisins and nuts. Pour into a well greased bread pan. Bake for 1 hour.


Sweet Potato and Apple Casserole

Plan one potato/apple per two people
Peel/cut potatoes and apples into cubes
Place in bowl and add salt, brown sugar, cinnamon according to your taste
Transfer to buttered baking dish
Top with butter and add a little water
Bake, covered in preheated oven (350) for 30 minutes
Uncover, cook about 30 minutes more

Good with ham, pork, veal and poultry

APPLE CHEDDAR PIE with SWEET POTATO CRUST

CRUST

1 cup mashed ,cooked sweet potato
1 egg lightly beaten
1/4 cup melted butter
2 Tbls fresh orange juice
1 cup all-purpose flour
1/2tsp salt
1tsp baking powder

FILLING
*******
1 Apple(i use a granny smith)peeled, cored and grated
1/2 cup sweet wine(a dessert wine is best)
1 1/2 cup grated cheddar cheese
3 eggs
1 1/2 cups cream
good pinch nutmeg

Crust
.......

In a bowl combine all ingredients, mix well.
Press dough into a large greased pie plate(I love these doughs you don't have to roll out!!!!!!)

Filling

Marinade apple in wine for about 4 hours. Drain well.
Sprinkle apple and cheese over base of pie crust.
beat eggs and cream together ,add nutmeg.
Pour into pie crust and bake for 180c(350f)for 45 minutes in a pre-heated oven.
Leave to stand in the plate for 15 minutes before cutting.

Serves 8-10

This is great cold also with a good salad and chutney, I've also taken it on picnics and the children have taken it in lunch boxes.
Its also good weekend fare for when you're busy and everyone's in and out!!!!!YAM BAKE A LA ORANGE
2 large Yams (1 lb. each); boiled,
peeled & sliced 1/4-inch thick
2 Oranges; peeled & sliced
3/4 c California Dried Figs
sliced crosswise into fourths
1/4 c Walnut pieces
1/4 c Margarine; melted
2 tb Honey
1 ts Grated orange peel

Arrange yam slices, oranges and figs in an 8-inch round baking pan. Sprinkle with walnuts. Combine melted margarine, honey and orange peel. Pour over all. Cover with foil; bake in a 350 F. oven for 30 minutes, until bubbly.
