Low Fat Mashed Potato Casserole rec.food.recipes/rosasharn (1999) Yield: 7 servings (serving size: 1 cup)
2 pounds baking potatoes, cut into 1-inch pieces 1 (8-ounce) tub nonfat process cream cheese product 1 cup plain nonfat yogurt 1/2 teaspoon garlic powder 1/4 teaspoon salt Vegetable cooking spray 2 tablespoons reduced-calorie margarine, melted 1/2 teaspoon paprika
Place potato in a saucepan; add water to cover, and bring to a boil. Cover, reduce heat, and simmer 20 minutes or until very tender; drain.
Combine potato, cream cheese, and next 3 ingredients in a bowl; beat at medium speed of an electric mixer 2 minutes or until smooth.
Spoon into an 11x72-inch baking dish coated with cooking spray; drizzle margarine over potato mixture. Sprinkle with paprika.
Bake, uncovered, at 350 degrees for 30 minutes.
