1/2 cup butter
2 T. cocoa
2 eggs
1 cup sugar
3/4 cup flour
1 cup chopped nuts
1/4 tsp. salt
Marshmallows

Mix butter with cocoa, melt. Mix eggs and sugar. Add chocolate mixture, flour, nuts, and salt. Spread into an 8" square greased baking dish. Bake at 350 until nearly done--about 15 minutes. Remove brownies from oven and top with marshmallows. Return to oven until marshmallows are nearly melted.Debbie.D.,.AL (10:32:27) : MAMA'S PECAN PIE

3 T. butter
2/3 cup light brown sugar
dash of salt
3/4 cup light corn syrup
1/2 cup milk
3 eggs
3/4 tsp. vanilla extract
1 cup chopped pecans
1 unbaked deep dish pie shell

Cream butter, slowly beat in sugar and salt. Add eggs, one at a time, beat briskly. Blend the entire mixture together. Pour into pie shell. Bake 10 minutes at 450 degrees. Reduce heat to 350 degrees and bake for 30 minutes or until custard sets. One of Mama's greatest pies!Debbie.D.,.AL (10:28:26) : ABBY'S CHOCOLATE CAKE

3 squares unsweetened chocolate
1/2 cup butter
1 cup water
2 cups sifted cake flour
1 1/4 tsps. baking soda
1 tsp. salt
2 eggs
1 cup (8 oz.) sour cream
2 cups sugar
1 1/2 tsps. vanilla extract

Grease 2 8-inch round cake pans, flour lightly. Combine 3 squares of the chocolate, 1/2 cup butter, and water in top of a double boiler, heat over simmering water until chocolate and butter melt. Remove from heat, cool. Sift flour, soda, and salt into a large bowl. Beat eggs with sour cream until blended in a medium-sized bowl. Beat in sugar and vanilla and stir into cooled chocolate mixture. Beat into flour mixture, half at a time, just until smooth. Batter will be thin. Pour evenly into cake pans. Bake in a moderate oven 350 for 40 minutes or until center springs back when slightly pressed. Top with Fluffy White Frosting.

FLUFFY WHITE FROSTING

2 egg whites
3/4 cup sugar
1/2 tsp. cream of tartar
dash of salt
2 1/2 tsps. cold water
1 tsp. vanilla extract
1 square unsweetened chocolate
1 T. butter

Combine egg whites, sugar, cream of tartar, salt, and water in the top of a large double-boiler. Beat until blended. Place top over simmering water. Cook, beating constantly with electric mixer about 7 minutes, or until mixture stands in firm peaks. Remove from water and stir in vanilla extract. Put cake layers together with frosting and spread on top and sides of cake with deep swirls. Melt 1 square of chocolate with 1 T. butter in microwave or put the chocolate/butter in a small cup and set the cup in HOT water. Stir until smooth. Drizzle over the top of the cake, letting mixture drip down sides.

DELICIOUS! Aunt Judy would make this cake for me for my birthday. A lot of work but it is worth it. Debbie.D.,.AL (09:42:07) : SOUR CREAM POUND CAKE

3 cups sugar
1 cup butter
6 eggs
3 cups cake flour
1/4 tsp. baking soda
1/2 tsp. salt
1 cup sour cream
1 tsp. orange extract
1/4 tsp. almond extract
1 tsp. vanilla extract

Grease and flour a large tube pan. Preheat oven to 325. Cream butter and sugar. Add eggs, one at a time, beating thoroughly. Sift together flour, soda, and salt. Combine sour cream and flavorings. Add alternately flour and sour cream mixture to the sugar mixture. Mix just until blended. Pour into tube pan. Bake for 70 minutes or until the center tests done.Debbie.D.,.AL (09:37:03) : MAMA'S CHOCOLATE PIE

1 cup sugar
2 cups milk
3 T. flour
3 T. cocoa
3 eggs
1/2 stick butter
1 tsp. vanilla extract
1 9-inch pie shell baked

Mix sugar, cocoa, and flour. Add milk and eggs. Let mixture come to a boil. Boil until thickened. Add butter and vanilla extract and pour into a baked pie shell. Use whites of eggs for meringue. The meringue recipe is at the bottom of Mama's Orange Pie.

This recipe is from my Aunt Judy. She is a great cook and always knows short-cuts!

1 stick butter
1 cup graham cracker crumbs
1 small pkg. chocolate chips
1 can coconut
1 cup chopped pecans
1 can sweetened condensed milk

Melt the butter in a baking dish, put crumbs over that, chips over that, etc., adding each ingredient. Bake in preheated 300 degree oven about 40 minutes. Bake this in an 8" baking dish.

Debbie.D.,.AL (09:28:14) : MAMA'S ORANGE PIE

1 cup sugar
1 1/2 cups orange juice
5 T. flour or cornstarch
4 egg yolks
1/2 stick butter
1 baked 9-inch pie shell

Mix sugar, cornstarch (or flour), and egg yolks and orange juice together. Boil until thick, stirring frequently. Add butter and remove from stove. Pour the filling into the shell and top with meringue.

Meringue

2 egg whites
1/2 cup sugar
2 T. water

Mix egg whites, sugar, and water in top of double boiler. Beat with rotary beater until thoroughly mixed, place over boiling water and cook 1 minute, beating constantly. Remove from heat and continue beating constantly until meringue stands in peaks. Pile over pie filling lightly. Place the pie in the oven for just a few minutes--3 or 4--until the meringue has browned nicely.

MAMA DONALD'S BANANA PUDDING

1 1/2 cups sugar
1/2 teaspoon salt
4 tablespoons flour
3 large eggs -- beaten
3 cups milk
1 tablespoon vanilla extract
1 box vanilla wafers
3 bananas

In pan mix together sugar, flour, vanilla and eggs.
Turn heat on medium. Add milk. Whisk constantly until thickened.
Line a casserole with cookies. Pour in 1/3 of pudding.
Slice 1 banana over pudding.
Top with a layer of cookies. Repeat for 2 more layers.
Chill.Dawn.NY (01:13:30) : Deep Dark Chocolate Fudge Cake

2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla
1 cup boiling water

FUDGE FROSTING:
1 cup cocoa
3/4 cup butter, melted
1/2 cup hot milk
2 teaspoons vanilla
4 cups powdered sugar

Preheat oven to 350 degrees. Grease and flour three 8 or 9-inch cake rounds. Combine all cake ingredients, except boiling water, and mix for 2-3 minutes until well blended. Stir in boiling water; batter will be very thin. Pour batter into prepared pans. Bake 30-35 minutes or until center tests done.

Cool cake for 10 minutes; remove from pans. Cool completely. Frost tops of layers and sides with frosting.

(At this point, I cut the cake into two layers and add a layer of chocolate pudding that i have prepared from a mix.)

FROSTING: Add cocoa to melted butter and hot milk in mixing bowl; stir well. Add vanilla and powdered sugar. Beat on medium speed until smooth and thickened. Cool to room temperature.
