Orange Flavored Vinegar Source: Unknown Yield: 4 3/4 cups
3 medium oranges 4 cups white wine vinegar 6 sprigs fresh thyme
Peel zest only (orange portion) from oranges. Squeeze juice from oranges and reserve. In a sterilized, dry 2 quart glass container, combine orange zest, orange juice, and vinegar. Add thyme leaves. Cover and store in a cool place to allow flavors to develop. Strain, and put into a bottle. Use a vegetable peeler to cut orange zest spirals, add to vinegar. Add new sprigs of thyme.
Orange Paprika Dressing Yield: 3/4 cup dressing
1/2 cup orange flavored vinegar 1/4 cup vegetable oil 1 tablespoon sugar 1/2 teaspoon salt paprika 1/8 teaspoon ground white pepper
In a small bowl, combine ingredients. Whisk until well blended. Serve with mixed green salad.
