Onions Stuffed with Meat rec.food.recipes/Linda2TX (2002) 4 Servings
4 medium-size onions 4 teaspoons bread crumbs 1 1/2 teaspoons finely chopped parsley, 2 tablespoons butter 3/4 cup chicken broth
STUFFING 3 teaspoons butter 1 1/2 teaspoons minced garlic 1 1/2 teaspoons parsley, minced 1/4 teaspoon marjoram 1/4 teaspoon thyme 3 tablespoons bread crumbs 1 egg, beaten 1/2 pound ground beef (chuck) 1/2 pound ground pork shoulder salt and pepper to taste
Peel and parboil onions for 10 min. cool and drain.
Remove center except for two or three layers.
Saute garlic, parsley and spices in butter. Add bread crumbs and egg. Combine with ground meats and season with salt and pepper.
Fill onions with stuffing. Top with bread crumbs, parsley, and butter mixture.
Place in shallow pan and add chicken broth; cover with foil and cook in 375F oven for 25 minutes. Remove tin foil for the last 10 min. to allow the top to brown.
