Spinach and Artichoke Pizza
1 Pizza Crust, Prebaked 2 boxes chopped frozen spinach, defrosted and squeezed dry olive oil 6 cloves roasted garlic, mashed 1/2 red onion, thinly sliced lemon-pepper seasoning 1/2 cup sundried tomatoes packed in oil, cut into strips 1 can artichoke harts, quartered 1 cup crumbled feta cheese 1 small can black olives, sliced pinch of oregano parmesan cheese to taste olive oil to drizzle on top
In a non-stick skillet, heat a little olive oil and stir-fry the red onion until caramelized. add the dried spinach and cook for 2-3 min. Add the mashed, roasted garlic, and the lemon-pepper. Cook 2 min. longer.brush the pizza crust with a little more olive oil. Spread the spinach mixture over the crust within 1/2 inch of the edge. top with the artichoke hearts, olive slices, feta cheese, parmesan cheese, oregano and slices of sundried tomatoes. drizzle with a little more olive oil. Bake in a pre-heated oven at 450F for about 10 min. or until completely heated through. This is best when baked on a pizza stone that has been heated in the oven for at least 30 min. |
