Sorry this is a day late but it is well worth it! I have been making it for years! The recipe is from a "Better Homes & Gardens" recipe book. (Not positive but the vegetable one I think.
SAUSAGE-STUFFED TURBAN SQUASH
1 3 lb. Turban Squash Salt 1 lb. Bulk Pork Sausage 1 cup Chopped Celery 1/2 cup Sliced Fresh Mushrooms 1/4 cup Chopped Onion 1 Slightly beaten Egg 1/2 cup Sour Cream 1/4 cup Grated Parmesan Cheese 1/4 tsp. Salt
Cut out the Turban top from the squash and scoop out the seeds. Lightly salt the inside of the squash. Place squash, scooped end down, in a shallow baking dish. Bake at 375F until tender, about 1 hour. Meanwhile, in skillet, combine pork sausage, celery, mushrooms & onion. Cook until vegetables are tender & meat is brown. Drain well. Combine egg, sour cream, cheese & salt and stir into the sausage mixture. Turn squash, scooped side up and fill with sausage mixture. Bake 20-25 minutes longer. Serves 6.
I serve it with mashed potatoes, a tossed salad and warm breadrolls. |
