Rice Flour Cakes (Almojabanas) PR.
Servings 40-45

1 1/2 cups rice flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon black pepper
3/4 cup milk
3 eggs
1/2 pound Puerto Rican white cheese, grated
3 cups corn oil

Combine all of the dry ingredients in a large bowl; add the milk. Beat the eggs into the mixture one at a time. Add the cheese and let the mixture sit at room temperature for at least 2 hours before frying. Heat the oil in a frying pan until hot but not smoking. Drop the fritters by spoonfuls and fry until golden brown on both sides. Drain on paper towels.
