Potato Chocolate Cake render/rec.food.cooking/1990
1 cup hot mashed potatoes, (unseasoned) 2 cups sugar 2/3 cup vegetable shortening 4 eggs 1/2 cup milk 2 cups flour, sifted 1 cup chopped nuts 2 Tbsp. baking powder 1 Tbsp. cinnamon 1/2 Tbsp. nutmeg 1 tsp. salt 1 Tbsp. vanilla 3/4 cup cocoa
Prepare mashed potatoes. Beat sugar into shortening until fluffy. Add eggs one at a time, beating well after each. Add vanilla and potatoes. Sift remaining dry ingredients together, and add alternately with milk, beating smooth. Add nuts. Turn into a greased, floured 9x13 pan. Bake at 350 degrees for 40-50 minutes.
