When Carlos Romero Barceló became Governor of Puerto Rico in 1976, he brought his family and his special charities to La Fortaleza (Governor's Mansion in Puerto Rico). Doņa Kate Donnelly de Romero Barcelo was a beautiful, articulate & active first lady (and an American), who was loved, respected & cherished by Puerto Ricans, no matter what their political tendencies were. I had the great honor to serve the governor & my country as Legislative Assistant & liason with local Congress. Doņa Kate published a cookbook to help a local organization that provides special education for underprivileged children. The following recipe was part of that book.
Cold-Avocado Soup La Fortaleza (Sopa Fria de Agucate Estilo La Fortaleza) Servings 6-8
4 medium avocados, peeled and diced 1/2 cup plain yogurt 1/2 cup light cream 2 cups chicken stock juice of 3 lemons salt and white pepper to taste 2 or 3 plum tomatoes, roughly chopped, for garnish 2 tablespoons watercress, roughly chopped, for garnish Combine all of the ingredients except the tomato and watercress in a blender or food processor and process until very smooth. Season to taste. Chill for at least 1 hour before serving.
Garnish with tomato and watercress. |
