Glazed Lemon Loaf Source: Gail Feehan, Cornwall
2 cups flour 3 tsp. baking powder 1/2 tsp. salt 1 cup sugar 1/2 cup melted butter 2 eggs (slightly beaten) 1 cup milk grated peel of 1/2 a lemon 1/2 tsp. vanilla
Combine flour, baking powder, salt, and sugar. In another bowl combine remaining ingredients. Add dry ingredients. Stir until moistened. Turn into a greased 9x5" loaf pan. Bake at 350 for 60 minutes. When cool, top with lemon glaze.
Lemon Glaze: 2 tbsp. sugar 2 tbsp. lemon juice
Combine sugar and lemon juice and mix until sugar is dissolved. When loaf is almost cool, spoon mixture over top.
