BROCCOLI BEEF PIE (Yield: 8 servings)
1 pound lean ground beef 1 (4-ounce) can sliced mushrooms, drained 2 cups shredded Cheddar cheese 1/3 cup chopped onion 2 cups Bisquick 1/2 cup water 2 cups chopped broccoli, cooked 4 eggs 1/2 cup milk 1/4 cup grated Parmesan cheese 1/2 teaspoon salt 1/2 teaspoon pepper
Preheat oven to 350°F. Spray a 13x9-inch baking pan with non-stick vegetable spray. In a large skillet, brown ground beef; drain excess fat. Add mushrooms, 1-1/2 cups cheese and onion. Remove from heat; set aside. In a medium bowl, combine Bisquick and water to form a soft dough. Add remaining cheese; mix well. Pat onto bottom and halfway up the sides of the prepared baking pan. Spread meat mixture over the dough. Sprinkle with broccoli. In a medium bowl, combine remaining ingredients and pour over the top. Bake for 35 minutes or until a knife inserted in the center comes out clean.
