CHEESY SALMON PIE (Yield: 4 servings)
1 (16-ounce) can salmon, drained and flaked 2 tablespoons butter or margarine 1/4 cup all-purpose flour 1 1/4 cups milk 1/4 cup shredded Cheddar cheese Salt and pepper 3 cups mashed potatoes 2 tablespoons butter or margarine, cut into small pieces
Preheat oven to 375°F. Spray a 9-inch pie plate with non-stick vegetable spray. Place the salmon in bottom of prepared pie plate. In a medium saucepan, melt butter; add flour, stirring constantly, until mixture is smooth. Gradually add milk, stirring constantly, until mixture is thick and smooth. Remove from heat; stir in cheese. Pour over salmon. Spread mashed potatoes over fish mixture. Dot with butter. Bake 25 to 30 minutes until potatoes are delicately browned.
