VIDALIA ONION PIE
(Yield: 8 servings)

3 tablespoons butter or margarine
3 cups Vidalia onions, sliced
1 9-inch deep-dish pie shell, baked
1/2 cup milk
1 1/2 cups sour cream
1 teaspoon salt
3 eggs, lightly beaten
1 cup shredded Cheddar cheese
3 slices bacon, crisply cooked and crumbled

Preheat oven to 325°F. In a large skillet, melt butter; add onion and sauté until brown. Spoon into prepared pie shell. In a medium bowl, combine milk and 1/4 cup sour cream; whisk until blended. Blend in salt and remaining sour cream. Add eggs and cheese, blending thoroughly. Pour into prepared pie shell. Bake for 30 minutes or until center is just set. Garnish with crumbled bacon.
