2 eggs, beaten 1/2 teaspoon Italian seasoning 1/2 teaspoon Dijon mustard 1/4 cup finely chopped onion 1 cup shredded Cheddar cheese 1 9-inch pie shell, unbaked 1 tomato, thinly sliced 1 green pepper, cut into thin slices 1/4 pound thinly sliced pepperoni 1 tablespoon Italian seasoning
Preheat oven to 350°F. In a medium bowl, combine eggs, Italian seasoning, mustard, onion, and cheese; spread evenly in prepared pie shell. Arrange tomato slices, green pepper, and pepperoni on top; sprinkle with Italian seasoning. Bake 30 to 40 minutes until center is set.
