Tropical Cheesecake:
Good for 2 cheesecakes.

4 (8 oz) packages of cream cheese
3 cups mashed ripe bananas
1 cup sugar
1/2 cup banana liqueur
2 tsp vanilla
8 eggs

Combine cream cheese, bananas, sugar, liqueur and vanilla in processor in batches, until smooth. Add eggs, one at a time, mixing well after each addition. Place in 2-9 inches spring form pans, well oiled. Place the pan in a roasting pan in Bain du Marie. Bake cake until center is baked, 80 to 90 minutes. Cool. Center may crack. Garnish with whipped cream or jam of your preference & some green mint leaves.
