In the frenzy of holiday preparations, shopping and entertaining, I find this quick and easy recipe a mercy!

Lazy Gourmet Fudge

You'll need
1 stick butter (won't set up as well with
margarine but failures are
yummy on ice cream!)
3 1/2 cups powdered sugar
1/2 cup cocoa powder
1/4 cup milk
1 tsp vanilla
1/2 cup chopped nuts.

Before starting, line an 8 x 8 pan with wax paper and set aside.
In a microwave safe bowl, stir together powdered sugar and cocoa. Make a well in the center, add the milk, vanilla and butter. Microwave on high for 2 minutes. Remove bowl from microwave, and mix with cake mixer until smooth and creamy. Stir in nuts and pour mixture into 8 x 8 pan. Chill 15 - 20 minutes, then cut into squares.

Note: As stated before, do not substitute margarine for the butter unless you plan on fudge sauce for ice cream. Do not double the recipe, or it doesn't work as well. My friend says to throw out the nuts, as they interfere with the chocolate. Enjoy!
