Easy Turkey Gravy (serves 8)

1/2 cup chopped onion
1 celery stalk, diced
2 tbsp flour
1 cup defatted turkey or 1 cup canned chicken broth
1 cup evaporated skim milk
1/4 tsp pepper
1/4 tsp salt

Lightly coat a medium saucepan with nonstick cooking spray. Add onion and celery and cook over medium heat until tender (about 5 minutes), stirring occasionally. Sprinkle flour over vegetables in pan and stir until flour is browned, about 3 to 4 minutes.

Stir in turkey or chicken broth and evaporated skim milk. Bring to a boil, reduce heat and simmer until thickened, about 10 minutes. Strain to remove vegetables. Season with salt and pepper to taste.
