Hot Cincy Brown

FOR EACH SERVING:
1 English muffin split and toasted
cooked shredded chicken
3 slices crisp bacon
1 cup cheese sauce

Cheese Sauce (for each cup):
2 tablespoons flour
2 tablespoons butter or margarine
salt and pepper
1 cup milk
3/4 cup grated cheddar cheese

To make cheese sauce, melt butter/margarine. Remove from heat and add flour, salt and pepper. Blend well. Return to heat for one to two minutes. Remove from heat and add milk slowly, stirring constantly. Return to medium heat and cook, stirring constantly, until sauce thickens and begins to bubble. Add cheese and stir until melted.

Use individual oval or rectangular casserole dishes to assemble Hot Brown. Place two halves of English muffin in bottom of casserole. Heap chicken on toasted English muffins. Cover chicken with cheese sauce. Bake in 350 degree oven about 10 minutes or until everything is heated through. Crush bacon and sprinkle on top. Serve at once.
