Yuca con Aceite y Cebollas

Boil the yuca (cassava) until done in salted water for about 15 minutes or so( I use frozen cassava by Goya). Test them with a fork. Cut in half and remove spinny middle and toss. Saute onions in olive oil or butter until just done. In a blender spin some crushed garlic with olive oil. Serve yuca with onions, drizzled with garlic-olive oil. This dish is excellent to accompany meats, chicken, fish and Paella or mixed rice dishes.
