Anticucho-Style Grilled Fish or Chicken
Servings: 4

4 fish fillets (shark, tuna, cod, mahi-mahi)
or 4 chicken breast halves, boneless and skinless

Marinade:
1/2 cup vegetable oil
5 cloves garlic, peeled
2 pickled jalapenos plus 2 tbsp. juice
1 teaspoon cracked black pepper
1 fistful of fresh cilantro (remove stems)
1/4 cup to 1/2 cup fresh lime juice
1/4 cup soy sauce

Combine and blend all marinade ingredients in blender until smooth. Marinate fish for 30-40 minutes or chicken breasts for 1-2 hours. Remove fish or chicken from marinade; boil marinade in small saucepan or microwave. Grill fish or chicken over medium hot coals until cooked through. Baste with the reserved cooked marinade several times during cooking. Serve with lime wedges, avocado slices and pico de gallo. - Source unknown
