Tomatoes with Basil, Peppers and Blue Cheese Source: Kathy Meade
3 tomatoes -- coarsely chopped 1/2 onion -- chopped 1 pepper, hot or sweet -- chopped 4 basil leaves -- chopped 1/2 cup blue cheese -- crumbled 2 tablespoons red wine vinegar 3 tablespoons olive oil salt and pepper -- to taste Put vegetables in bowl. Mix dressing ingredients and pour over vegetables. Chill in refrigerator for at least one hour.
NOTES: This salad can be varied by using different cheeses, feta,, mozzarella, jack, brie all work as well as the blue varieties. Also you can try different vinegars or oils. Sometimes I use the garlic herb vinegar that I made. Also try different oils. We liked it with a mildly hot banana pepper. |
