Oeufs Au Buerre Noir (Fried Eggs in Black Butter)
This traditional French dish is a true classic. Roughly translating to "Fried Eggs in Black Butter", it is a simple dish of fried eggs, browned butter, vinegar, and capers. If capers are not to your taste, just omit them.

3 tablespoons butter, divided
3 large eggs
1/2 teaspoon apple cider vinegar
1 tablespoon well drained capers

Melt 1 tablespoon of butter in a large heavy frying pan over medium heat. Fry the eggs until they are done to your taste. Remove the eggs and place on a serving plate. Add the remaining butter and increase the heat to medium high. Cook until the butter is a very dark brown. Remove the heat, add the vinegar, and mix well. Pour the butter sauce over the eggs and top with the capers. Makes 2 servings.
