Carol's Pancakes (WW points=3) Source: Weight Watchers Meeting Makes 1 Serving
This is a wonderful breakfast. I use one of my fruits for the topping or you can use any diet topping you like. The pancakes are really nice and thin but what a wonderful breakfast.
Put in blender: 4 whole egg whites (or 7 tbsp water plus 4 tbsp. meringue powder) 1/2 cup cottage cheese -- low fat 1 1/2 tbsp flour 1 dash vanilla -- optional
Blend and cook in non stick frying pan. You can make one big pancake or 4 to 6 small ones that are easier to turn.
