Marinated Fish with Lemons and Limes Makes eight servings
10 fresh limes, squeezed (about 1 1/4 cup) 6 fresh lemons, squeezed (about 1 cup) hot red chili pepper, chopped (dried or fresh; use amount desired for hotness) 2 red onions, thinly sliced 3 cloves garlic, finely chopped 1 tsp. salt 1/4 tsp. pepper 3 1/2 lb. white fish (flounder, sole, haddock or cod) 1/2 cup chopped Italian parsley
Mix together juices, pepper, onions, garlic, salt and pepper. Place fish in a glass or ceramic bowl and pour marinade over fish. If the fish isn't covered, add more lemon or lime juice. Cover and marinate at least three hours, or until fish is white and opaque (have it refrigerated). Just before serving, drain and garnish with parsley.
