Sponge Candy

1 cup sugar
1 cup dark corn syrup
1 Tablespoon cider vinegar
1 Tablespoon baking soda

Heat sugar, corn syrup, & vinegar to boiling in 2 qt. saucepan over medium heat, stirring constantly, until sugar is dissolved. Boil without stirring, to 300' on candy thermometer (hard ball stage); remove from heat. Quickly stir in baking soda thoroughly. Pour mixture into ungreased 13x9x2 inch pan. Do not spread! Cool & break into pieces. Can then be dipped in chocolate coating if desired.

Coating

12-18 oz. semi-sweet or milk chocolate chips
2-3 Tablespoons shortening

Melt chocolate & shortening over low heat; stirring constantly. (use 1 Tbls of shortening for every 6 oz. of chocolate) When mixture is smooth remove from heat. Dip each piece of candy into coating.
