Mesclun Greens Chef Salad With Ham, Cheese And Celery Seed Dressing
3-4 tablespoons Canola oil 1 cup cubed leftover ham 1/4 cup minced yellow, green or red onion 2-4 tablespoons cider vinegar 2 tablespoons ea: sugar and water 1/2 teaspoon dry mustard 1 teaspoon celery seed 3 hard boiled eggs, sliced 1 cup shredded cheese of your choice (opt) Slices of tomato, croutons, cucumber, red onion (opt) 4-6 cups torn salad greens
Heat oil in skillet and saute ham until crisp. Add onion, vinegar, sugar, water, mustard and celery seed. Bring to a boil. Adjust seasonings to taste. Pour over Greens and toss gently. Garnish each serving with slices of hard boiled eggs, cheese, tomato, croutons, cucumber and red onion. Serves 6-8.
Go to taste on amounts here. A little more or less of any of the dressing ingredients is fine. Some folks like more sugar, some like more oil. You can substitute turkey ham for the regular ham. Mesclun greens are the mixed baby greens. Using these gives you a boost of calcium, iron, fiber and vitamins. Now you can pour the dressing over the greens to have a traditional wilted salad, or let it cool and use then. |
