Asparagus and Tomato Salad
1 bunch asparagus, steamed, chilled and chopped 2 tomatoes, chopped 4 tablespoons plain yogurt 1 tablespoon dijon mustard 1 tablespoon grated parmesan cheese
In a medium bowl, mix together the yogurt, mustard and cheese. Add chopped asparagus and tomatoes and toss. Serve cold alone or as a side dish. Yields: 4 servings |
