Basic Potato Salad
2 lbs. potatoes Various vinegars, optional (it will depend on what you have available) 1 1/2 quarts chicken stock, (optional) Lemon or lime juice, optional 1/4 cup fresh mint, optional
Celery, optional 1 cup mayonnaise Bell peppers, optional 1/2 cup sour cream Red onion, optional 1 tsp. lemon pepper Scallions, optional 1/2 tsp. mustard powder Black olives, optional (or pimento stuffed small green olives-spanish-sliced) Granny Smith apples, optional Nuts, optional
In pan, boil potatoes in salted water or stock with mint. Drain, cool well and dice. In bowl, mix mayonnaise, sour cream, lem on pepper and mustard powder; refrigerate. Get creative with: chopped granny Smith apples, various vinegars, lemon or lime juice, celery, red, yellow, or green bell peppers, red onion, scallions, black olives, nuts, or ... |
