Hummus
2 cans of chickpeas 1/3 cup sesame paste (tahini) or peanut butter 1/4 to 1/3 cup lemon juice 1/4 cup olive oil 3 garlic cloves, minced 1-1/2 teaspoons salt 1/4 teaspoon Ground cumin 1/4 teaspoon ground pepper 1/3 cup chopped parsley or 1 T. dry parsley Pinch of red pepper flakes
Drain chickpeas. Combine chickpeas, tahini, lemon juice, olive oil, garlic, salt, cumin, and pepper in food processor or blender or mash well until smooth and fluffy. Add parsley until well blended. Serve with pita chips. |
