Honey Roasted Pork Loin
From: Gooseberry Patch - Farmhouse Christmas

2 to 3 lbs boneless pork loin roast
1/4 cup honey
2 TBS Dijon mustard
2 TBS mixed or black peppercorns, crushed
1/2 tsp dried thyme
1/2 tsp salt

Place roast on a lightly greased rack in a shallow roasting pan. Combine honey & next 4 ingredients; brush half of mixture over roast. Bake at 325°F for one hour; brush with remaining honey mixture. Bake 30 additional minutes or until thermometer inserted in thickest portion registers 160°F.
