2 Tbsp. butter
2 Tbsp finely chopped celery
2 Tbsp. grated carrot
1 Tbsp. finely chopped onion
3 Tbsp. cornstarch
2 C. cold milk
1 C. diced ham
2 C, grated cheddar

Saute celery, carrot & onion in butter til tender. Stir cornstarch into cold milk til blended; stir slowly & constantly into veggies. Heat til thickened & bubbly. Add ham & stir. Add cheese & stir til melted. Serve with croutons.

2 tbsp.butter
2 tsp. minced onion
3 tbsp.flour
1 tsp. salt
dash of pepper
1/4 tsp.dry mustard
1 c. milk
3 hard-cooked eggs,sliced
1 c. cooked ham, cubed

Melt butter in frying pan; cook onion til golden. Stir in flour.spices til thick paste. Whip in milk;cook,stirring constantly til thickened. Stir in eggs & ham; heat through. Serve over rice,noodles or toast.

Deviled eggs are something like a "kitchen sink" recipe for me. I don't have a regular recipe; I see what I have on hand that I can put into it. I put the hard-cooked eggyolks into a bowl. I also add any egg whites that break while being peeled. (I hold a few back in case I get the mixture too moist; and then mash and add them last.) I use the following items in it; adjust the amounts to your taste:
Miracle Whip
Mustard (dry or prepared)
A bit of pickle relish
A bit of green onion
A dash of red pepper
A bit of salt if you want it, but I find it unnecessary.
If you mix it in a processor or blender, it'll be easier to squeeze through a tube for a "fancy" deviled egg.
For garnish I've used any of these:
Slice of green or black olive
Bit of pickle
Bit of parsley or cilantro

The deviled egg plate is the first to be emptied, and nobody leaves so much as a speck of any filling on the plate.

Believe me, I'm considering to forget filling the eggs and using the whole boiled egg to make a deviled-egg dip for the rest of the raw vegetables.

Boil eggs, peel and slice the cooled eggs in half.
Place yolks in a bowl.
Mash the yolks.
Add to the yolks:
Miracle Whip
1 teaspoon yellow mustard
2 Tablespoons sugar
Milk (be careful not to use too much, just enough to give you the right consistency)
Mix thoroughly. Pipe into Egg Whites.
I make my eggs "To Taste" so make sure you taste as you add the ingredients.
I hope you enjoy them as much as my family and friends have.
These are the best deviled eggs I have ever tried!

"Impossible" Ham Salad Pie
(6 servings)

1/2 pk Peas; frozen, 10 oz size
1 c Ham; finely chopped cooked
1 c Cheddar cheese; shredded
1 c Milk
1/2 c Mayonnaise
1 1/2 ts Mustard; prepared
3/4 c Bisquick baking mix
3 Eggs

Instructions

Preheat oven to 400F. Lightly grease pie plate 10x1 1/2". Rinse peas under cold water to separate; drain.

Sprinkle peas, ham and cheese in pie plate. Beat remaining ingredients till smooth, 15 sec in blender on high speed or 1 minute with hand beater. Pour in pie plate.

Bake till golden brown and knife inserted halfway between center and
edge comes out clean 30 to 35 minutes. Let stand 5 minutes before cutting.

Servings : 4 to 6

1 box (7 ounces) shell macaroni,
cooked and drained
2 cups cubed fully cooked ham
1 cup chopped green pepper
1 cup chopped tomato
1/4 cup chopped onion

----- Dressing -----
1/2 cup mayonnaise or salad dressing
1/4 cup grated Parmesan cheese
2 tbls milk
1/4 tsp salt
Additional Parmesan cheese

In a large bowl, toss macaroni with ham, green pepper, tomato and onion. In a small bowl, combine mayonnaise, Parmesan cheese, milk and salt. Pour over pasta mixture and stir to coat.

Cover and chill. Sprinkle with additional Parmesan before serving.
Yield: 4 to 6 servings.

Turkey, Corn, and Sweet Potato Soup

1 tablespoon butter
1/2 cup chopped onion
2 scallions, chopped
1 small jalapeno, minced
5 cups turkey or chicken broth
1 1/2 pounds sweet potatoes, peeled and cubed
2 cups cubed cooked turkey
salt and pepper
2 cups frozen corn
cilantro leaves

Saute the onion, scallion, and jalapeno until the onion is soft in a large
saucepan. Add the broth, sweet potatoes, turkey, salt, and pepper. Cover and simmer for 30 minutes or until the potatoes are tender. Add the corn and cook until the corn is heated through. Garnish with the cilantro leaves before serving.

3 cups cubed cooked turkey

2 cups halved seedless green or red grapes
1 teaspoon dried thyme
1/2 teaspoon dried sage

Mix all of the ingredients together, adding as much mayonnaise as you prefer. Chill for at least 1 hour and serve. If you are planning on storing the salad for a long time, add 3 additional tablespoons of mayonnaise after it is the perfect consistency for you to prevent the salad from drying out totally.

This salad is a great way to use leftover turkey. It is very light and can be eaten plain, in a sandwich, on apple slices, or on crackers. It
makes divine sandwiches on leftover biscuits.

3 cups cubed cooked turkey
2 celery stalks, chopped
1 cup dried cranberries
1 cup walnut pieces (optional)
1 teaspoon dried thyme
1/2 teaspoon dried sage
1 teaspoon garlic powder
salt and pepper
dash of orange or lemon juice
mayonnaise to taste

Mix all of the ingredients together, adding as much mayonnaise as you
prefer.

Chill for at least 1 hour and serve. If you are planning on storing the salad for a long time, add 3 additional tablespoons of mayonnaise after it is the perfect consistency for you to prevent the salad from drying out
totally.

4 tablespoons apple cider
1 tablespoon butter
1 medium red onion, chopped
1/2 cup chopped fennel
2 tart apples, peeled, cored, and sliced
3 cups chunked turkey
2 cups cooked wild rice
4 tablespoons butter
2 tablespoons flour
2 cups apple cider
4 tablespoons heavy cream
1 teaspoon freshly ground nutmeg
1/4 teaspoon coriander
salt and pepper

Preheat the oven the 350 degrees. Grease a large casserole dish.

Place the 4 tablespoons cider and 1 tablespoon butter in a large skillet and heat over medium heat until the butter melts. Add the onion, fennel, and apple
and saute for 10 minutes.

Meanwhile mix the turkey pieces and wild rice in a large bowl. Add the
apple mixture and mix until well combined. In a medium saucepan melt the 4 tablespoons butter. Add the flour, and whisking constantly, cook for 1 minute. Pour in the cider slowly, whisking constantly, until the mixture
is smooth and thick.

Hot Stuffed Cheddar Turkey Potatoes

3 large baked potatoes
1 can cream of broccoli soup
1/4 cup milk
2 cups grated cheddar
1/2 cup small cooked broccoli florets
1/2 cup cooked diced carrots
1 cup cooked chunked turkey
1/2 teaspoon rubbed sage
salt and pepper

Preheat the oven to 350 degree. Halve the potatoes lengthwise. Scoop
out the flesh into a large bowl and leave a 1/4 inch thick shell. In a small saucepan combine the soup, milk, and cheese. Cook over medium heat until the cheese is melted and the mixture is smooth. Coarsely mash the potatoes with 1 cup of the cheese sauce. Mix the broccoli, carrots, and turkey into the potato mixture. Add the sage, salt, and pepper. Gently spoon the mixture into the potato shells and place in a flat casserole.

Cover the casserole and bake for 20 minutes. Serve the remaining
cheese sauce on the side.

As in any GOOD OLD recipe measurements are what you want them to be!!!
Ingred; Ham broth, cut up left over ham, 1 onion cut up fine, potatoes, water, salt, flour.

Directions: Add water to ham broth and the ham bone enough to at least cover the bone. I also "wash" the pan out in which the ham was cooked (WITH JUST WATER!!!), and add this to my kettle of water, broth and ham bone. Boil this and simmer to get the flavor from the bone. The more water the more ham pot pie ....but remember not to add too much water over the top of the ham bone because you will be diluting the broth! Remove the bone. Add the cut up left over ham. Bring to a boil. chop 1 onion fine and add to broth. Boil 10 mins. Cut up potatoes (5 or 6 potatoes or whatever amount you like) ....in thick slices and add. Stir and allow to come to a boil. In a bowl, mix flour, salt if desired, and enough water to form a dough. Using extra flour, roll out the dough thin and cut into squares. (I usually get lazy and pinch off some dough and with floured hands, I flatted the dough between my hands until thin, not see through!)These are then dropped into the boiling ham broth. Stir once in a while. Turn the fire low and cover. Cook 15 minutes. This will thicken as it cools. Eat and Enjoy!! To get the white type thick broth be sure to use extra flour!! Also it turns the white color on the 2nd day after it has cooled in the refrig. This also tastes GREAT the next day if you are lucky to have any left!!! Let me know how this compares to yours!!! For leftover ham, our family favorite has always been scalloped potatoes and ham, but I did see a recipe posted for that (if you haven't already, just type "ham" as the keyword in the search box).
Some suggestions I found in a cookbook include:
Wrap thinly sliced ham around asparagus, green beans or broccoli and serve with mustard mayo.
Make sandwiches from ham, cream cheese and chutney.
Stuff artichokes with chopped ham, sauteed mushrooms and cream sauce.
Make a salad with chunks of ham, bleu cheese and walnuts on greens with a honey-mustard dressing.
Make a casserole of creamed mushrooms, olives, chopped ham and mustard, top with a biscuit crust.
Cube ham and mix into omelets or scrambled eggs.

Other ideas I use at home include making a pizza (could be very easy with purchased crust and sauce). My husband loves ham and pepperoni, my sis and I like ham, pineapple and black olive or ham and sauerkraut. All of course with mozzarella cheese.
One salad I make quite often is cubed ham with a small type of cooked pasta (like bow-tie or shells), some frozen peas(thawed)or I suppose canned would be ok, maybe some tiny pieces of carrot or celery, whatever is handy, and cubes of gouda cheese (which I just learned from a Dutch friend is pronounced "how-da"), mix with a mayonnaise-based dressing, use whatever herbs or amount of sweetness you like - this one always turns out tweaked a bit based on my mood!

Rice Patties
2 Servings

1 cup rice
7-8 spears asparagus -- sliced
1/4 cup green onion -- chopped
salt and pepper
1 egg white
2 tablespoons flour
1/2 cup diced ham
1 teaspoon fresh thyme

slice onions and asparagus, steam in a little liquid in the micro wave a
couple of min until crisp tender. Add rice and remaining ingred. prepare hot
skillet and drop a spoonful into hot pan (pan has been prepared with a small
amount of olive oil) brown and serve.

Serving Ideas : a tomato and green onion mix with oil and vinegar

This recipe is one my mom always made when I was growing up and now I make it for my own family. It's a real favorite and is soooo quick and easy. In fact, I'm going to prepare it for dinner tomorrow. (I have a lot of leftover ham from Christmas to use up!)

4 slices bacon (can use turkey bacon)
1/4 lb. cooked ham
1-1/2 Tbs. butter or margarine
1-1/2 Tbs. olive oil
8 oz. thin spaghetti, cooked and drained
1/3 cup freshly grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
2 eggs, slightly beaten
3 Tbs. chopped parsley

Cut bacon and ham in julienne strips. Brown bacon pieces lightly in large skillet; drain on paper towels; pour off fat from skillet. Saute ham slowly in butter and oil, 4 to 5 minutes. Add hot spaghetti, reserved bacon, cheese, salt, pepper, and eggs. Toss quickly to coat spaghetti evenly and thoroughly. Sprinkle with parsley. Serve.

1 10-oz. pkg. frozen, chopped spinach
1/2 cup sliced green onion
2 T. butter or margarine
2 T. all-purpose flour
1 cup milk
1 cup saltine cracker crumbs
1 cup grated Parmesan cheese
8 boneless, chicken breast halves (about 3 3/4 lbs.)
1 cup cooked, cubed ham

In a small saucepan, cook spinach according to package directions; drain well. In a medium saucepan, make white sauce; saute onion in margarine or butter over low heat until tender. Stir in flour, adding milk all at once. Cook over low heat, stirring constantly until bubbly. Boil and stir 1 minute more until smooth and thickened.

Combine cracker crumbs and cheese. Dip chicken breast halves in crumb mixture to coat lightly. Arrange breast halves in a 13 X 9 X 2 inch baking dish that has been treated with nonstick spray. Seal leftover crumb mixture in a 1-quart bag.

Stir spinach and ham into white sauce; spoon sauce over chicken breasts. Allow to cool and cover baking dish with foil, attaching bag of crumb mixture to side of dish.

To prepare for serving, thaw and preheat oven to 350 degrees. Cover and bake for 60-75 minutes. Uncover and sprinkle with crumbs. Bake 10 minutes more. Makes 8 servings.

Freeze in: 13 X 9 X 2 inch baking dish; 1 quart bag.

Serve with: Pineapple chunks and mandarin oranges sprinkled with shredded coconut, Cranberry Tea

Note: This is practically one-dish meal.

Here's another recipe for using left over ham. Easy too.

1/2 cup margarine
1 Cup Bisquick
1/4 t pepper
4 cans (103/4 oz)chicken broth
2 cups frozen cubed hash brown potatoes
1 cup thinly sliced carrots
1 cup sliced celery
1 med. onion chopped
2 cups cubed ham
2 cups milk

Melt margarine in 4 qt Dutch oven. Stir in baking mix and pepper. Heat until bubbly. Remove from heat and stir in everything BUT milk and ham. Heat to boiling over med. heat, stirring constantly. Boil 1 minute. Reduce heat until vegetables are tender (about 5 minutes). Stir in ham and milk. Heat thru. If you live at high altitude cook vegetables 10 to 15 minutes.

This is what I always fix with leftover ham. So good.

2-3c chopped ham
1 can cream of mushroom
1lg diced onion
1can water
enough peeled and cut up potatoes to fill up crock pot

Cook on low 4-5 hours. Last 30 min. add 1 c shredded cheese.
Sometimes I add a small can of mushrooms.
Good with a salad and rolls.

I made this yummy chowder today, it was so easy and fast and so good. Really
warmed our tummys on a cold day.

1 can cream of mushroom soup
2 soup cans of milk, or more depending on desired thickness
2 cans mixed vegetables or veg-all
1/2 # crab meat, cooked
few grinds of fresh black pepper

In medium saucepan combine soup and milk over medium high heat, stirring to
cream the two together, add the vegetables and bring just barely to a boil.
Add the crabmeat and pepper and reduce heat to low, heat just long enough to
heat the crabmeat.

I used this same recipe a couple of weeks ago, using leftover ham, cut into
small cubes, instead of the crabmeat. I added the ham at the same time as the
vegetables. This was also delicious.

(1) Try dicing it and cooking it in a pot of beans.

(2) Grind it up and make a Ham Sandwich Spread, by mixing it with some mayo or miracle whip, a squirt of mustard, a Tbsp or two of pickle relish, and perhaps some chopped hard-boiled egg.

(3) Grind it up and make a ham loaf (like meatloaf).

(4) Chop or grind some to add to cream cheese, to spread on crackers.

I've been making burritos (wraps) from leftovers since I was old enough to clear the dinner table and do dishes. This means no containers! Using rice, potatoes, or vegetables for the major portion and bite-size pieces of meat rolled in a tortilla you can also add whatever else comes to mind. This is also a great idea for breakfast on the run. Use hash brown potatoes (pre-cooked if you like them brown) scramble up some eggs add sausage, ham or bacon if you like. Make up a bunch then wrap them in a microwavable outer wrap. Blast them in the microwave for 1-3 minutes on your way out the door on those frantic mornings.

This recipe is from River Roads II, the very first cookbook that I got when we got married. Unfortunately, I've lost the darn thing, but this recipe and the recipe for Peanut Butter Kisses are two that I remember. This is easily doubled and you can freeze one for another day. I bake mine until it's done and then freeze it. Whenever it's time for ham and cheese pie, I grab one out of the freezer, throw it into the oven and bake it without defrosting it first. It comes out well every time. Enjoy!

4 large eggs
1/4 tsp. pepper
1/4 tsp. baking powder
1/2 cup milk
2 cups finely chopped ham
1 cup grated cheese
1-2 roasted red peppers, chopped fine*
1 small onion, chopped fine*
1 tsp. chopped garlic*
1 can (4 oz.) mushrooms, drained*
seasoned salt if desired
1 9" deep-dish pie shell

Put all of the ingredients into a large bowl and beat until blended. Pour the egg mixture into the pie shell and bake for 40 minutes or until a toothpick stuck into the center of the pie comes out clean.
YIELD: 1 pie.

*****The original recipe didn't call for the peppers, onions, garlic, or mushrooms, but we like it better when they're added to the pie.

Hot Hoppin' John Salad

1 cup coarsely chopped ham
1 cup onions, chopped, divided
2 minced garlic cloves
1 tablespoon vegetable oil
3 cups cooked rice, (cooked in chicken broth), hot
1 16 oz. can frozen black-eyed peas, rinsed, drained
1 teaspoon hot pepper sauce
1/2 teaspoon black pepper, cracked
1/4 teaspoon salt
2 slices bacon
4 cups green cabbage, very finely shredded

Cook ham, 1/2 cup onion, and garlic in oil until lightly browned. Stir in rice, peas, hot sauce, pepper and salt. Cook until thoroughly heated. Place bacon in large skillet; cook until crisp; set aside. Drain all but 1 tablespoon drippings. Add cabbage and remaining onion; stir-fry until tender-crisp. Spoon onto large platter. Ladle rice mixture into center of cabbage; crumble bacon over top of salad. Serve hot or at room temperature.

1 1/2 c Cubed, cooked ham, trimmed
1/4 c Cubed firm fat from cooked ham
1 1/2 ts Horseradish Mustard or other hot mustard
2 ts White wine vinegar
Big pinch grated nutmeg
Small pinch ground cloves
4 Drops Pepper Sherry or bottled hot pepper sauce
1/4 ts Anchovy paste
1/8 ts Finely minced garlic
Big pinch ground pepper
Big pinch ground ginger
Big pinch ground thyme

1. Grind the ham and fat fairly fine, either in a food processor or, in two batches, in an electric blender.

2. if using a processor, add the remaining ingredients at once and process until the mixture is rather like a coarse pate. If using a blender, scrape the first batch of ground ham into a bowl, add the seasonings, process the rest of the ham, and combine with the mixture in the bowl. If too coarse, process again in two batches.

3. Taste for seasoning, then pack into a jar, cover, and refrigerate overnight or longer to let the flavors mingle.

Makes about 1 1/2 cups

1 lb. ground ham
1 lb.ground pork (unseasoned)
1 sweet onion (medium) grind into ham and pork
1 cup (approximate) fresh bread cubes.
2 eggs
1/2 to 1 cup milk (I've never measured this- you need enough to make a very soft mixture that will retain its shape when it is formed into balls.)

Mix, adding milk as needed. Shape into balls using an ice cream scoop. Place in a greased 9x13 pan. Pour over sweet-sour syrup and bake at 350 degrees for 45 minutes to an hour. I usually roll the balls over about half way through.

Sweet-Sour Syrup
1 cup brown sugar
3/4 cup water
1/4 cup vinegar
1 tsp. dry mustard

Mix together and pour over ham balls.
These can be frozen and baked later.

eggy/malaysia (10:12:06) : Scalloped Potatoes
make these with or w/out ham

6 medium potatoes, pared and thinly sliced
1/3 cup minced onion
3 T. flour
1-1/2 tsp salt
pepper
4 T. butter
2-1/2 cups milk, scalded

Preheat oven to 350
Put 1/3 of the potatoes into greased 3 qt casserole dish.
Sprinkle with 1/3 onion and flour, S&P. Dot with butter.
Repeat layering ending with butter.
Pour the hot milk over potatoes. Should be about an inch below top of potatoes.
Cover casserole.
Bake at 350 for 30 minutes. Remove cover; bake 60-70 minutes until tender and
top browned. Let stand 5 minutes before serving

eggy/malaysia (10:11:20) : Manly Man Quiche

1 cup roughly diced ham
1 cup chopped onion
1/2 cup diced mushroom
1 grated zucchini, skin on. Squeeze out liquid in paper towels, or use another favorite vegetable

1 unbaked 9-10 inch pastry shell (I pre-bake shell about 5min.) 3 cups shredded white cheddar, jack, Swiss or combo
3 eggs, slightly beaten, I have been known to use 4
1 cup milk
1/2 tsp salt
1/8 tsp pepper
1/4 tsp nutmeg

Heat the diced ham in large skillet with a bit of butter.

Add onion, shrooms and zucchini, cook till onion is soft.

Turn contents of skillet into the pastry shell using at least a 9 inch pie plate.

Sprinkle w/cheese. Pour a mixture of eggs, milk, s&p and nutmeg over cheese.

Bake at 350 30-35 minutes or until very lightly browned and set

3 tbsp butter divided
2 tbsp flour
1 c. milk
1 c. shredded processed American cheese
2 c. diced fully cooked ham
1 1/2 c.med. noodles,cooked & drained
1 c. frozen peas, thawed
1/4 c. dry bread crumbs
1/2 tsp. dried parsley flakes

in a saucepan melt 2 tbsp butter...stir in flour til smooth...gradually add milk..bring to a boil over med. heat...cook & stir 2 min....remove from heat...stir in cheese til melted...add ham,noodles,peas....pour into greased 1 qt. baking dish...melt remaining butter & add bread crumbs & parsley...sprinkle over casserole...bake uncovered @ 350 for 30 min. or til heated thru...serves 4victoria--Pa (07:03:16) : an idea for leftover ham

FRENCH HAMWICHES

2 Tbsp. butter,softened
2 tsp. mustard
4 slices bread
4 slices Swiss cheese
2 slices leftover ham
1 egg well beaten
2 Tbsp. milk
1/2 applesauce, warmed

spread each slice of bread w/ butter & mustard..place a slice of swiss & ham on 2 slices of bread...top w/ remaining slices of bread...beat egg & milk together..dip each sandwich into egg mixture...brown sandwiches on both sides in a lightly buttered frying pan...top each with a spoonful of applesauce if desired.
