Chipotle Mashed Potatoes
Makes 6-8 servings

4 cups mashed potatoes,about 2 lbs.
1/4 cup diced lean slab bacon
1 medium onion, cut in half & thinly sliced
1 Tbls. finely chopped Chipotle peppers
1/4-1/2 cup shredded cheddar or Parmesan cheese
2 cloves garlic,minced (Cook w/bacon & onion)
1 tsp. chopped fresh rosemary

Prepare mashed potatoes as usual,omitting butter. Fry bacon & onion together til bacon is crisp & onion is browned.Add to potatoes,mixing thoroughly. Check seasonings. Add Chipotles & one or more of the other ingredients, if desired.
