Basic Fresh Tomato Sauce

1 teaspoon olive oil
1/2 medium onion, minced
1 clove garlic, minced
4 fresh tomatoes, peeled, diced
1 bay leaf
2 teaspoons herb seasoning salt (Spike)
1 teaspoon oregano
1 teaspoon basil
1 teaspoon thyme
1/8 teaspoon pepper
1/2 green pepper, chopped (optional)
1 teaspoon chopped parsley

Heat olive oil in heavy skillet. Saute onion and garlic over Medium heat, stirring until transparent. Add tomatoes, bay leaf and seasonings. Mix well. Simmer, uncovered for 20-30 minutes. Stir occasionally. Sauce should be slightly thick, yet still juicy. Cool. Use immediately or refrigerate. Can add green pepper and parsley. Source Unknown.
