Glazed Broiled Tomatoes Servings: 3
3 ripe tomatoes in 3/4-inch slices (about 3 slices each) 3 tablespoons mayonnaise 1 teaspoon Dijon mustard 2 tablespoons finely chopped parsley 2 teaspoons chopped fresh chives 1/4 teaspoon salt 1 dash fresh ground black pepper 4 tablespoons grated Parmesan cheese, divided parsley for garnish
Heat oven to 400 F. Place tomatoes in single layer in 9x6-inch baking dish. Combine mayonnaise, mustard, parsley, chives, salt, pepper and 2 Tbsp. of the Parmesan cheese. Spread over tomatoes. Sprinkle with last 2 Tbsp. of the Parmesan cheese. Bake for 10 minutes, then broil until tops are golden, glazed and bubbly. Sprinkle with more chopped parsley. Source Unknown.
