Banana-Walnut Cake with Banana-Walnut Frosting

Serves 12

2 cups all purpose flour
1 cup white sugar
1 teaspoon baking power
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 cup cooking oil
3 large eggs
3 medium bananas
1 teaspoon vanilla
1 cup walnuts, chopped
1/4 cup butter milk or sour milk
To make sour milk use 1/4 cup milk and 1/2 teaspoon white vinegar.

BANANA-WALNUT FROSTING
2 Tablespoons milk
4 cups powdered sugar
2 Tablespoons butter
1/4 teaspoon lemon extract
1/4 teaspoon salt
1/4 teaspoon vanilla
1 small banana
1/2 cup walnuts, finely chopped

Preheat oven to 350F. Sift all dry ingredients into a large mixing bowl. Add all other ingredients and mix with electric mixer on high for 2 minutes, or until smooth. Pour mixture into a greased and floured 9x13" glass cake pan. Bake for 30 to 35 minutes, or until a knife inserted in center comes out clean. Cool completely before adding frosting.

Banana-Walnut Frosting:
Put all frosting ingredients into a med. size bowl and mix with an electric mixer on high until smooth. Leave cake in pan and frost the top, or take cake out of the pan and frost the sides as well.
