GARLIC BEEF STIR-FRY
1/2 pound leftover rare beef fillet, cut into 2 x 1-inch strips 2 teaspoons soy sauce 2 teaspoons Asian sesame oil 1/2 teaspoon sugar 2 teaspoons cornstarch 2 tablespoons peanut oil 2 garlic cloves, minced 2 green onions, cut into matchstick slivers 2 tablespoons dry sherry
Place meat in a bowl; add soy sauce, sesame oil, sugar and cornstarch. Toss to coat meat well, then let stand at room temperature for 20 minutes. Heat peanut oil in a wok or heavy skillet over high heat. Add meat and stir-fry for 30 seconds. Using slotted spoon, remove meat and set aside. Add garlic and green onions to wok; stir- fry for 30 seconds. Return meat to wok, add sherry, and stir-fry for 1 minute. Serve with steamed rice. Serves 2 or 3.
