Caribbean Honey Lime Greens

Serves 8 or more

This salad is actually a recipe modified from a Key West cookbook. It is fabulous and draws raves, in part because the presentation looks so good..

Salad Dressing:
in a blender until pureed:
2 cloves garlic minced
1 cup extra virgin olive oil (you can get by with less)
1/2 cup fresh lime juice
4 Tbsp honey
4 Tbsp chopped red onion
salt and pepper to taste

Greens
8 cups mixed exotic greens (red leaf, arugula, European mix, etc.)
1 cup chopped pistachios or other nuts (pecans,almonds)
2 cups peeled Valencia oranges, chopped in bite size chunks
generous handful of baking currants (Sunmaid Baking Zante Currants)
8 sprigs mint leaves chopped

Arrange greens on plates. Top with oranges and raisins, nuts and mint. Serve with dressing. Alternatively, you could toss it all with the dressing.
