Caribbean Chicken Salad alt.food.low-fat/Wherna/1999
2 grilled or broiled chicken breasts (skinless) cut into pieces 1 can pineapple chunks,drained 1/3 cup green onion,chopped 3 tbsp.mayonaise or yogurt (I use fat free) 1 1/2 tbsp.fresh ginger,minced 1 tbsp.lime juice salt and pepper to taste 2 cantaloupes, papayas or honeydew melons, halved and seeded (I ended up cutting the fruit in chunks and mixing with the salad)
Mix salad ingredients together. Mound the salad in the fruit shells to serve.
