Orange Pineapple Muffins
Servings 6

1 can (8oz) crushed pineapple
1-3/4 cups all-purpose flour
1/4 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, slightly beaten
3/4 cup milk
3 tablespoons butter or margarine, melted
1/2 cup chopped walnuts
2 teaspoons grated orange peel

Drain pineapple. In large bowl, combine flour, sugar, baking powder and salt. In small bowl, combine eggs, milk and butter. Stir in pineapple, nuts and orange peel. Make well in center of dry ingredients. Pour in milk mixture. Stir just until moistened. Spoon into greased 2-1/2- inch muffin cups. Bake in 400 F oven 20-25 minutes or until wooden pick inserted in center comes out clean. Serve warm.
