Raisin Scones
2 cups flour 1/4 cup sugar 2 1/2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup butter, slightly softened 3/4 cup raisins 2 eggs 1/3 cup milk 4 tablespoons sugar
Preheat oven to 400°F. In large bowl, mix the flour, sugar, baking powder and the salt. Cut in the butter until the mixture resembles coarse crumbs. Mix in the raisins.
In a small bowl mix the egg and 1 egg yolk; reserve the remaining egg white in another bowl. Add the eggs to flour mixture. Mix in enough of the milk to make a dough that holds together.
Turn onto lightly floured surface and knead 5 or 6 times. Halve the dough. Pat each half into a circle ½ inch thick. Cut each into 8 triangles. Place, spaced apart, on a lightly greased baking sheet. With a fork beat the reserved egg white until bubbly. Brush scones with egg white and sprinkle generously with sugar. Bake for about 15 minutes or until golden brown. |
